let's get started!
Ingredients:
- 2 Chicken Breast (Note: I prefer using chicken breast because it has less fats but it's entirely up to you whether if you want to use chicken thigh or drumsticks)
- 1 Carrot
- Broccoli
- 1 Carrot
- Broccoli
The Honey Lemon Sauce
- 1 Teaspoon of Olive Oil
- 2 1/2 tbsp of Honey
- Half a Lemon (Depends on how many chicken breast you're using &how big your lemon is)
- 1-2 Cloves of Garlic (to taste)
- A Pinch of Mixed Herbs
- Pinch of Pepper
- 2-3 Pinch of Chives.
Instructions:
Get your ingredients ready!
Let's start off first by pre-heating oven at 230 DegC and preparing the honey lemon sauce.
Mix all the ingredients into a bowl. Don't be afraid to taste it after mixing all of the ingredients for the sauce together, because that's exactly how your chicken will taste like once it's been baked.
Tip: Roll the lemon by pressing it against the table with your hands and exerting pressure before cutting the lemon to be squeezed. This is to help loosen up the pulps so it allows you to easily squeeze out the juice. Once you've cut it in half, easiest way is to use a fork and run it through against the skin to squeeze out all the juice.
Cut the chicken into pieces or you can leave it as a whole. Entirely up to you, I prefer to chop it into pieces so it's easier to divide during meals.
Then put the chicken into the sauce to marinate. Cling wrap the chicken and place it into the fridge. I usually tend to marinate the chicken for about 2 hours.
Bake chicken for about 20 - 25 minutes at 200DegC. Do not pile it on top of one another as to allow the chicken to cook evenly, let it spread like a butterfly. While waiting for the chicken to bake, you can start steaming your vegetables & again entirely up to you what type of vegetables you prefer. I am a broccoli addict hehehe.

I served it with broccoli and steamed carrots on the side, but you can serve it with brown rice or quinoa which ever you prefer.
Enjoy your yummy & easy honey lemon chicken!
