Today, I will teach you how to make a super quick yet yummy breakfast or as a snack. It's healthy guacamole on rice cake alongside with kale crisps! Jam-packed with antioxidants, fiber and vitamins to boost your immune system, help with digestion & satisfy your sugar cravings.
Let's get started.
Ingredients:
Guacamole
- 1 Whole Avocado
- 1/4 Tomatoes
- Half Large Shallots
- Chives
- 1tsp Chia Seed
- 1/4 Lemon Juice
- 1tsp of Olive Oil
- Pinch of Peppers
- Organic Rice Cakes (Low Gi, No GMO & Gluten Free)
Kale Chips
- Kale
- Pinch of Salt
- 1tbs Olive Oil
Instructions:
Pre-heat oven to 150DegC and prepare the Kale first as it needs to be baked.
Make sure to properly wash and drain excess water till dry. Use kitchen paper to pat dry. This is to ensure that the kale will be crispy after baking.
Cut the leaves off by running your knife along the stem.
Next, cut it up to bite size and lay it out on your tray. (You can use baking paper but I ran out of it so this will do.. haha) Once done, drizzle a bit of olive oil and a pinch of salt onto the kale. Once done, Pop it into the oven for about 8mins - 10mins at 150DegC, depending on what kind of kale you use. (I however usually go for 8mins).
While waiting for the kale to crisp up, lets start prepping our yummy guacamole.
First off, start dicing the shallots, tomatoes and chives. Once done, put the ingredients into a bowl and you can also add in the chia seed. Leave it aside.
After cutting the Avocado in half, slice in cubes before scooping it out from the skin. It'll make the mashing and mixing easier.
Lastly, Mix and mash it all up together & season with a bit of pepper to your personal liking. No salt needed.
